
Bio & Brado, quando la tradizione toscana sposa la genuina bontà

(Translation below) Il richiamo del cibo, quello genuino e gustoso tipico della Toscana, mi ha condotta tra le lussureggianti colline dell’Impruneta (Firenze), alla scoperta di Bio & Brado. Se amate immergervi nella natura, respirando e gustando l’autentica tipicità culinaria della tradizione toscana, questo è il posto che fa per voi.
Sono da sempre un’insaziabile curiosa, mossa da un atavico appetito che accompagna e scandisce le mie giornate. Questa irreversibile condizione, mi porta ad essere costantemente alla ricerca di luoghi inediti dove mangiare. E’ così che ho scoperto Bio & Brado.
Ma partiamo dall’inizio. Stavo organizzando un pranzo tra amiche, alcune delle quali con figli al seguito. L’idea era quindi di trovare un locale possibilmente in campagna, dove i bambini potessero divertirsi all’aperto. Requisito essenziale: mangiare bene…ça va sans dire!

Dopo qualche ricerca, mi imbatto nell’Azienda Agricola biologica Bio & Brado, ristorante ed allevamento allo stato brado di suini, cinta Senese, grigio Casentino e cinghiali. Continuando a leggere tra le informazioni, noto che è anche fattoria didattica.
Sbirciando tra le foto, ho subito l’acquolina in bocca. Invitanti salumi e primi piatti, talmente gradevoli all’occhio che quasi mi sembra di sentirne il profumo. Dulcis in fundo, il grande principe della tavola toscana: la carne alla brace.
Nella mia testa ho la chiara convinzione che le mie ricerche sono terminate. Prendo il cellulare e prenoto. Sabato ore 13;30, confermato. A noi due Bio & Brado!
La strada per arrivare al Bio & Brado, in Via di Colline n. 2 ad Impruneta (Firenze), è davvero molto piacevole. Colline di rara bellezza, disseminate di vigne e distese di olivi. Sembrano messi lì, appositamente per ricordarci la fortuna di vivere in una regione come la Toscana.
Bio & Brado, un gustoso angolo di Paradiso in collina
Attraversando il cancello di ingresso si accede alla proprietà. Bio & Brado sfruttando la naturale pendenza del territorio, si presenta con un colpo d’occhio impagabile sulla vallata. E’ presente un bel parcheggio privato ricoperto di ghiaia, che lo rende quindi facilmente accessibile anche in presenza di disabilità. Si notano a breve distanza, grandi spazi delimitati da recinti per gli animali. Domina centralmente una costruzione. E’ il ristorante.
Osservo un’area rialzata e terrazzata, delimitata da muretti. Ci sono dei fili con numerose lampadine sorrette da pali in legno. Mi immagino già seduta al fresco, durante una torrida serata estiva. Davanti a me ad un gustoso tagliere di affettati, ascoltando il frinire dei grilli e sorseggiando un buon vino.

L’accoglienza al ristorante è decisamente calorosa e cordiale. Lo staff è giovane e molto dinamico, e nonostante i sorrisi siano coperti dalle mascherine, sono i loro occhi a parlare.
L’ambiente è raccolto, ma particolarmente grazioso e curato. Sebbene la struttura sia di nuova realizzazione sono stati impiegati esclusivamente materiali d’epoca originali, per ricreare l’effetto ed il calore di un ambiente rurale. Avrò modo più avanti di raccontare la bella storia che si cela dietro la nascita dell’attività.
Possenti e scenografiche travi in legno sorreggono il soffitto. Le pareti sono costituite da grandi vetrate che permettono una visuale a 360 gradi sull’esterno, contribuendo così a dare un senso di continuità tra gli interni, e l’incantevole natura esterna che circonda la fattoria.
La cucina è visibile dalla saletta. Personalmente è qualcosa che a me piace sempre molto. Si respira nell’aria un paradisiaco profumo di carne alla brace. Intravedo in corrispondenza dell’entrata, l’oggetto dei miei desideri: la griglia. Sempre in prossimità della cucina, succulenti prosciutti appesi fanno capolino, lasciando intendere che sarà un pasto tutt’altro che dietetico.
I tavoli mantengono un’apprezzabile distanza tra loro. La mise en place in accordo con il contesto rustico, presenta dei dettagli che fanno percepire l’attenzione prestata nel prepararla.
Un menù che parla toscano (compresa la C aspirata!)
Il menù del Bio & Brado, è un vero sussulto al cuore. Offre infatti un insieme di golose tipicità realizzate con materie prime a Km.0, oltre che pasta fresca fatta in casa. L’elenco degli allergeni è ben segnalato a fondo pagina, e questo è sempre un valore aggiunto.
Le porzioni sono generose. Primeggiano i taglieri strabordanti di ogni tipo di leccornia salata, tra salumi, formaggi e crostini di vario genere. Difficile decretare quale sia il più buono. Personalmente, ho letteralmente perso la dignità davanti al salame di grigio del Casentino. Tra i primi piatti, troviamo proposte sostanziose come i favolosi pici o i tortelli di patate, accompagnati da un ricco ragù di cinghiale o cinta senese. Tra le offerte compare anche la scelta di un primo del giorno.

Parlando dei secondi piatti, tutti a base di carne, bisogna osservare un minuto di religioso silenzio in segno di venerazione. L’ampia scelta tra bardiccio, filetto, rosticciana, salsicce, scamerita, bistecca o fegatelli, mettono a dura prova il buonsenso, perché si vorrebbe assaggiare tutto. Ordinando una grigliata mista, potrete indubbiamente ritenervi assolutamente soddisfatti. E che dire dei contorni? Fagioli in bianco, all’uccelletto o patate arrosto; non avrete di che lamentarvi!
Sul vino consiglio di puntare tutto su quello della casa, in arrivo da Rufina. E’ servito nel bellissimo fiasco con l’intreccio in paglia, tipico della Toscana più genuina e verace.
Tra i dolci è doveroso rimarcare la freschezza del cheesecake e del tiramisù. Quest’ultimo è stato particolarmente gradito, perché non eccessivamente zuccherato.
La fattoria didattica: la gioia di grandi e piccini
Oltre al cibo, è da elogiare anche la parte didattica dedicata ai bambini. Negli spaziosi recinti esterni, si trovano diversi animali: maialini, pony, oche, pavoni, galline, caprette e molto altro. I bimbi possono avvicinarsi alla rete e dare loro da mangiare, e non ultimo, salire sulla groppa di uno dei pony per fare un breve tragitto.

Quest’ultima attività è seguita da una figura specifica, ed i piccoli vengono muniti di casco e pettorina. La dolce Giulietta, un pony dal pelo rossiccio molto docile e paziente, è stata l’attrazione principale. Prossimamente come già organizzato in passato, Bio & Brado gestirà anche un centro estivo con personale specializzato.

All’interno della fattoria, è possibile portarsi a casa un “gradito souvernir”, grazie alla vendita al dettaglio dell’intera produzione. E’ disponibile anche un comodo servizio di consegna a domicilio, per ordini superiori ai 30 euro.
Attenzione, spoiler! Se visitando il centro storico di Firenze foste assaliti da un improvviso languorino, fermatevi presso il loro Alimentari degli Uffizi, in Via Lambertesca n. 10/R. Scoprirete di persona quello che le parole non sono in grado di trasmettere: i sapori.

Bio & Brado, un’attività nata letteralmente da zero
Guardandosi intorno, viene spontaneo domandarsi come è nata questa bella realtà toscana. Pietro Campolmi il giovane titolare 34enne, porta avanti la fattoria totalmente da solo, mantenendo il focus sul concetto su cui si fonda l’attività: un’azienda biologica a km.0 ed ecosostenibe. La sua storia è affascinante, e racconta di come un grande sogno possa trasformarsi in realtà, grazie alla tenacia e alla passione.
Appena laureato, Pietro decide nel 2013 di trasferirsi in Umbria con un socio, allevando ed esportando maialini di cinta senese.
Inizia così la produzione di salumi senza conservanti, il cui gradimento sarà poi testato all’interno della salumeria del padre a Firenze. Arrivano i primi riscontri positivi ed i numerosi riconoscimenti. La voglia però di intraprendere un’attività tutta sua, lo porta nel 2016 a sciogliere la società e tornare nuovamente in Toscana.
Ed è a questo punto che acquisterà il terreno dove prenderà vita Bio & Brado. Tutto era da costruire da zero. Notevoli sono stati gli imprevisti, tra permessi, lavori, e non ultima la pandemia, che ha messo forzatamente in stand-by il sogno di Pietro.

Merito della forte motivazione, finalmente a marzo 2021 il Bio & Brado ristorante ha aperto i battenti, raccogliendo i suoi giusti successi. Ora mi è chiaro perché nel 2020 è stato anche premiato con il certificato di eccellenza. L’indiscussa qualità dei prodotti e l’amore nel realizzarli, ne è la dimostrazione.
Se siete alla ricerca di un luogo raccolto e tranquillo, dove vivere un’esperienza assolutamente appagante e all’insegna del buon cibo, andate a visitare Bio & Brado. Sono certa che vi conquisterà. C’è un lungo e duro lavoro dietro il successo di questa attività, e merita che se ne parli.

Bio & Brado, the place wich tuscan tradition marries genuine goodness of eating
The appeal of food, I mean the real and tasty food typical of Tuscany, guided me among the lush hills of Impruneta (Firenze) to discover Bio & Brado, an organic farm that deserves to be known. If you love to immerse yourself in nature, breathing and tasting the authentic typical Tuscan cuisine, this is the place for you.
I have always been an insatiable curious, moved by an atavistic appetite that accompanies and beats my days. This irreversible condition, takes me to be constantly looking for new places to eat. That’s how I discovered Bio & Brado.
But let’s start from the beginning. I was organizing a lunch with friends, some of them with children in tow. The plan was to find a place, possibly in the countryside, where the children could enjoy themselves outdoors. Essential requirement: to eat well…ça va sans dire!
After some research, I came across the Organic Farm Bio & Brado, restaurant and breeding of pigs, Cinta Senese, Casentino gray and wild boars. Continuing to read through the information, I notice that it is also an educational farm.
Peeking through the photos, my mouth immediately watered. Inviting cold cuts and pasta dishes, so pleasing to the eye that I almost seem to smell them. Dulcis in fundo, the great prince of the Tuscan table: the grilled meat.
In my head I have the clear conviction that my research is over. I take my cell phone and make a reservation. Saturday at 13:30, confirmed. Let’s go to Bio & Brado!
The road to get to Bio & Brado, in Via di Colline n. 2 in Impruneta (Florence), is really very pleasant. Hills of rare beauty, filled with vineyards and expanses of olive trees. They seem to have been put there specifically to remind us of how lucky we are to live in a region like Tuscany.

Through the entrance gate you enter the property. Bio & Brado exploiting the natural inclination of the land, is presented with a priceless view of the valley. There is a nice private parking lot covered with gravel, so it is also easily accessible in the presence of disabilities. At a short distance, there are large spaces bordered by fences for animals. Centrally dominates a building, it’s the restaurant.
I notice a high level, terraced area bordered by low walls. There are wires with numerous light bulbs supported by wooden poles. I can already imagine myself sitting in the cool of a hot summer evening, listening to the chirping of crickets and sipping a good wine in front of a tasty platter of cold cuts.
Cozy welcome at the restaurant is warm and friendly. The staff is young and dynamic, and although their smiles are covered by masks, it is their eyes that speak for them.
Atmosphere is cozy, yet particularly graceful and well-kept. Although the structure is newly built, only original period materials were used to recreate the effect and warmth of a rural setting. I will have a chance later to tell the beautiful story behind the birth of the business.
Impressive, dramatic wooden beams support the ceiling. The walls are made up of large windows that allow a 360-degree view of the outside, helping to give a sense of continuity between the interior and the enchanting natural surroundings of the farm.
We can see the kitchen from the dining room. Personally, it’s something I always enjoy. There is a heavenly smell of grilled meat in the air. At the entrance I see the object of my desires: a stone oven with a grill. Also near the kitchen, succulent hams are hanging, suggesting that it will be a meal anything but dietary.
Tables maintain an appreciable distance between them. The mise en place in accordance with the rustic context, presents details that make you feel the attention paid in preparing it.
A menu which speaks Tuscan
Bio & Brado’s menu is a real heartbeat. It offers a set of delicious Tuscan specialities made with raw materials at 0 km and fresh handmade pasta. The taste of the dishes is tangible confirmation of this. The list of allergens is well indicated at the bottom of the page, and this is always an added value.
Portions are generous. The chopping boards overflowing with all kinds of savoury delicacies, including cold meats, cheeses and croutons of various kinds, stand out. It is difficult to decide which is the best. Personally, I literally lost my dignity in front of the Casentino grey salame. Among the first courses, we find substantial proposals such as fabulous pici or potato tortelli, accompanied by a rich ragù made from wild boar or Cinta Senese. There is also a choice of a first course of the day.
Speaking of the main courses, all meat-based, one must observe a minute of religious silence as a sign of veneration. The wide choice of bardiccio, fillet, rosticciana, sausages, scamerita, steak or fegatelli (chicken livers) puts your common sense to the test because you want to try everything. With a mixed grill you can be absolutely satisfied. What about the side dishes? Beans, “all’uccelletto” or roast potatoes, you won’t have anything to complain about!
I recommend choosing the house wine from Rufina. It is served in a beautiful flask with a straw weave, typical of the most genuine and authentic Tuscany.
Among the desserts, it is worth noting the freshness of the cheesecake and tiramisu, the latter particularly appreciated because it is not overly sweetened. Excellent.
The educational farm: a delight for young and old together
In addition to the food, the didactic part for children is to be commended. In the spacious outdoor enclosures, there are various animals: piglets, ponies, geese, peacocks, hens, goats and much more. Children can get close to the nets and feed them, and last but not least, climb onto the back of one of the ponies for a ride. This last activity is supervised by a special figure, and children are provided with a helmet and harness. Sweet Juliet, a very docile and patient reddish-haired pony, was the main attraction. In the coming months, as already organised in the past, Bio & Brado will also run a summer camp with specialised staff.

Inside the farm, for those who want to take home a “welcome souvernir”, there is the retail sale of the entire production. A convenient home delivery service, is also available for orders over 30 euros.
Spoiler alert! If, while visiting the historical centre of Florence, you are suddenly hungry, stop by their Alimentari degli Uffizi, in Via Lambertesca 10/R, and you will discover in yourself what words cannot convey: flavours.
Bio & Brado, an activity literally born from the ground up
Looking around, it’ s easy to wonder how this beautiful Tuscan business came to be. Pietro Calpolmi, the young 34-year-old owner, runs the farm completely on his own, keeping the focus on the concept on which the activity is based: an organic, zero-kilometre, eco-sustainable farm. His story is fascinating, and tells how a great dream can become reality, thanks to tenacity and passion. As soon as he graduated in 2013, he decided with a partner to move to Umbria region, raising and exporting cinta senese piglets.
He started the production of cold cuts without preservatives, which were then tested in his father’s delicatessen in Florence. The first positive feedback and numerous awards arrived. In 2016, however, his desire to start his own business inspired him to dissolve the company and return to Tuscany, buying the land where Bio & Brado would be created. Everything had to be built from beginning to end. There were many unexpected events, including permits, construction work and, last but not least, the pandemic, which put Pietro’s dream on hold.
Thanks to his strong motivation, finally in March 2021 the Bio & Brado restaurant opened its doors, collecting its well-deserved success. It is now clear to me why Bio & Brado was also awarded the certificate of excellence in 2020. The undisputed quality of the products and the love of making them is proof of this.
