(Translation below) Ode alla pasta, senza la quale la vita sarebbe più grigia! Credo con questa affermazione di interpretare il pensiero di molte persone, non solo in Italia, ma nel mondo. L’Italia è conosciuta ed apprezzata per la produzione di pasta artigianale di eccellente qualità. E’ per questo motivo che voglio parlare del Pastificio Lonigro di Firenze.

Alimento versatile e ricco di proprietà nutritive, la pasta sorprende ogni volta per i suoi innumerevoli impieghi e varianti, ma, affinché il piatto risulti gustoso ed indimenticabile, il requisito essenziale oltre alla lavorazione, è la materia prima.

Sono da sempre una ghiotta, appassionata ed incontentabile divoratrice di pasta. Dopo gli avvenimenti degli ultimi anni, siamo tutti più inclini a porre maggiore attenzione al contenuto ed alla provenienza degli alimenti che mangiamo. Come avrò modo di raccontare più avanti, il Pastificio Lonigro possiede tutte queste caratteristiche.

Da tempo porto avanti il proposito di privilegiare aziende del territorio, per incentivare e contribuire allo sviluppo dei piccoli imprenditori toscani. Del resto, in un mondo ormai pressoché totalmente globalizzato, con il loro encomiabile lavoro tramandano e preservano la storia, le tradizioni e l’identità del Paese.

Un’azienda a conduzione familiare che porta avanti la tradizione del Made in Italy

Con questi presupposti, mi imbatto appunto, nel Pastificio Lonigro, con sede in località Signa, provincia di Firenze. Si tratta di un’azienda a conduzione familiare, che produce l’originale ed eccellente pasta artigianale italiana. Faccio conoscenza con Pasquale Lonigro, titolare dell’azienda, che insieme ai figli, gestisce l’attività. La sua storia merita di essere raccontata, perché parla di tenacia, sogni e crescita personale.

Originario della Puglia, ma ormai residente in Toscana da quasi un trentennio, Pasquale è strettamente legato alla terra ed al concetto di genuinità. Questa passione l’ha ereditata dal padre ed ancor prima dal nonno, che si dedicavano all’agricoltura su larga scala, pur mantenendo sempre ben saldo il principio di autenticità del prodotto.

Successivamente e per seguire le orme del padre, entra con successo nel settore del caffè. La passione però per l’agricoltura e l’artigianalità, lo accompagnano nel tempo e rimangono il suo grande sogno, fino a quando un giorno, decide di trasformare le sue aspirazioni in realtà, aprendo dal nulla il suo pastificio alle porte di Firenze.

Sebbene si tratti una realtà di origine relativamente recente, ha già ottenuto i suoi meritati riconoscimenti, comparendo anche nel magazine Magnifica Toscana, che l’ha selezionato tra le eccellenze della regione.

All’interno del piccolo e curato Pastificio Lonigro, l’entusiasmo è tangibile. Si respira ovunque l’amore per la professione, e la voglia costante di creare qualcosa di unico, che renda i titolari sempre orgogliosi del loro operato. Tutti i componenti della famiglia hanno letteralmente “le mani in pasta” nell’attività, e seguono personalmente ogni processo; a partire dalla scelta della materia prima, fino alle varie fasi della lavorazione, nonché il packaging ed il marketing, e perfino la consegna.

Il rapporto diretto con la clientela, è una pratica ormai sempre più in disuso, e proprio per questo, costituisce uno dei punti di forza della famiglia Lonigro, perché garantisce una particolare attenzione alle esigenze di ogni singola richiesta.

Trafilatura al bronzo: un’antica tecnica che contraddistingue l’eccellenza dei pastifici artigianali

La materia prima è l’elemento essenziale che caratterizza il Pastificio Lonigro. Per realizzare la loro straordinaria pasta di qualità, si utilizza semola di grano duro italiano, proveniente esclusivamente da due noti Molini italiani, che hanno le rispettive coltivazioni in Puglia e Sicilia.

Fiore all’occhiello del Pastificio, è l’impiego della trafilatura al bronzo. È una tecnica antica quanto affascinante che richiede particolare attenzione, soprattutto nella lunga procedura di essiccazione. Nello specifico, consiste nel far passare l’impasto – realizzato semplicemente con semola di grano duro ed acqua naturale a temperatura ambiente – per estrusione e compressione, attraverso un trafilo (uno stampo) in bronzo.

Il processo di trafilatura consente poi di forgiare la pasta nelle dimensioni desiderate, mediante lame rotanti che la tagliano al momento dell’uscita dal trafilo. Questa particolare pratica, consente di mantenere sali minerali e vitamine in percentuale più alta, rispetto ad altri metodi di lavorazione del prodotto finito. Tutto questo conferisce alla pasta artigianale Lonigro, una piacevole e tipica porosità e rugosità, in grado di trattenere i condimenti e restituire in bocca un gusto unico ed appagante.

Non sorprendetevi quindi se alla vista, la pasta artigianale trafilata al bronzo, avrà un aspetto diverso da quella industriale. Si presenta difatti con un colore più opaco, e velata da un sottilissimo strato di polvere di amido.

Il processo di essiccazione è, come anticipato, il momento cruciale per assicurarsi un prodotto di qualità superiore. Richiede tempo, pazienza e dedizione.

Una volta terminata la trafilatura ed ottenuto il formato di pasta desiderato, si procede a stendere quest’ultima sopra dei telai. Sono due le fasi necessarie, la pre-essiccazione e l’essiccazione, ed entrambe devono essere eseguite a temperatura molto bassa e costante. La prima, permette alla pasta di mantenere la giusta elasticità, che la prepara alla condizione finale dell’essiccazione vera e propria. L’intero ciclo ha una durata di 36-72 ore, a seconda del formato di pasta. Ma non è tutto! terminato il periodo di essiccazione, l’intera famiglia procede ad un attento ed accurato controllo di qualità che precede il confezionamento.

Oltre la pasta c’è di più

Oltre alla produzione di pasta artigianale disponibile in numerose varianti e formati, come la deliziosa pasta di grano saraceno, ad esempio, il pastificio offre anche una vasta gamma di sughi e ragù pronti, e prodotti da forno. Seguendo la tradizione della regione che ha dato loro i natali, la Puglia, non potevano assolutamente mancare i gustosi e fragranti taralli. Questi ultimi sono proposti in numerose versioni, e rigorosamente realizzati secondo la ricetta originale pugliese.

L’azienda esporta con successo i suoi prodotti principalmente in Italia, ma data la sempre più numerosa domanda, valuta anche eventuali richieste dall’estero.

Fare la conoscenza di una famiglia così unita ed orgogliosamente legata alla tradizione dell’artigianalità italiana, è stata un’esperienza davvero positiva. Spesso non teniamo conto del lavoro e dell’impegno che si celano dietro un prodotto artigianale, ma sicuramente, l’inconfondibile ed impareggiabile gusto, una volta provato, non potrà più farci tornare indietro.

La pasta artigianale italiana è una fonte naturale di felicità universale, o per meglio dire, citando il celebre regista italiano Federico Fellini, “La vita è una combinazione di pasta e magia“.

Pastificio Lonigro, the fine art of artisan Italian pasta production in Florence

This is an ode to pasta, without which life would be much greyer! I believe by this statement I am interpreting the thoughts of many people, not only in Italy, but around the world. Italy is known and appreciated for the production of excellent quality artisanal pasta, which is why I want to talk about Pastificio Lonigro in Florence.

Pasta, is a versatile food rich in nutritional properties, and surprises each time with its numerous uses and variations, but in order for the dish to be tasty and unforgettable, the essential requirement, in addition to the manufacture, is the raw material. I have always been an avid, passionate and irrepressible devourer of pasta. After the events of the last few years, I think we are all more inclined to pay more attention to the content and origin of the food we eat, and as I will tell you later, Pastificio Lonigro has all these characteristics.

My intention has long been to favour local companies, to encourage and contribute to the development of small Tuscan entrepreneurs. After all, in a world that is now almost totally globalised, their commendable work hands down and preserves the Country’s history, traditions and identity.

A family-owned business that carries on the tradition of Made in Italy

This is how I came across Pastificio Lonigro, based in Signa, in the province of Florence. It is a family-owned business producing the original and excellent handmade Italian pasta. I make the acquaintance of Pasquale Lonigro, the owner of the company, who, together with his sons, runs the business. His story deserves to be told, because it speaks of tenacity, dreams and personal growth.

Originally from Apulia, but now living in Tuscany for almost thirty years, Pasquale is closely linked to the land and the concept of authenticity. He received this passion from his father and even earlier from his grandfather, who dedicated themselves to farming on a large scale, while always maintaining the principle of authenticity of the product. Later and to follow in his father’s footsteps, he successfully entered the coffee business.

His passion, however, for agriculture and craftsmanship, accompanied him over time and remained his great dream, until one day, he decided to turn his aspirations into reality, opening his pasta factory on the outskirts of Florence from nothing. Although it is a reality of relatively recent origin, it has already obtained its well-deserved awards, even appearing in the Magnifica Toscana’s magazine, which selected it among the excellences of the region. Inside the small, well-kept Pastificio Lonigro, the enthusiasm is evident. The love for the profession is everywhere, and the constant desire to create something unique, which will always make the owners proud of their work.

All the members of the family literally have their hands in the dough’ of the business, and they personally oversee every process, starting with the choice of raw materials, through to the various stages of processing, as well as packaging and marketing, and even delivery. The direct relationship with the customers, is a practice that is now gradually falling into disuse, and for this very reason, constitutes one of the strengths of the Lonigro family, because it guarantees special attention to the needs of each individual request.

Bronze wire-drawing: an ancient technique distinguishes the excellence of artisan pasta makers

The raw material is the essential element characterising the Pastificio Lonigro. To make their extraordinary quality pasta, they use Italian durum wheat semolina, sourced exclusively from two well-known Italian mills, which have their respective cultivations in Apulia and Sicily.

The focal point of the Pastificio is represented by the use of bronze wire-drawing. It is an ancient and fascinating technique that requires particular attention, especially in the long drying process. Specifically, it consists of passing the dough – made simply with durum wheat semolina and natural water at room temperature – by extrusion and compression, through a bronze die (a mould). The drawing process then allows the pasta to be moulded into the desired dimensions, using rotating blades that cut it as it exits the die. This particular practice allows a higher percentage of minerals and vitamins to be preserved, compared to other methods of processing of the finished product.

All this gives Lonigro artisanal pasta, a pleasant and typical porosity and roughness, able to retain the sauces and return a unique and satisfying taste to the mouth. So don’t be surprised if at first glance, bronze-drawn artisanal pasta looks different from industrial pasta. In fact, it has a more opaque colour, and is covered by a very thin layer of starch powder.

The drying process is, as anticipated, the crucial moment in ensuring a superior quality product. It requires time, patience and dedication. Once the drawing is finished and the desired pasta shape has been obtained, the pasta is rolled out on frames. There are two necessary phases, pre-drying and drying, and both must be carried out at a very low and constant temperature. The former allows the paste to maintain the right elasticity, which prepares it for the final condition of effective drying. The entire cycle lasts 36-72 hours, depending on the pasta format. But that’s not all! Once the drying period is over, the entire family proceeds to a careful and accurate quality control that precedes packaging.

Beyond pasta there is much more

In addition to the production of artisanal pasta available in many variations and formats, such as the delicious buckwheat pasta, for example, the pasta factory also offers a wide range of ready-made sauces and ragouts, and baked foods. Following the tradition of their native region, Apulia, the tasty and fragrant taralli could not be missed. The latter are offered in numerous versions, and strictly made according to the original Apulian recipe.

The family-owned company, successfully exports its products mainly to Italy, but given the ever-increasing demand, it also evaluates possible requests from abroad. Meeting such a united family, proudly linked to the tradition of Italian craftsmanship, was a truly positive experience.

We often overlook the work and hard work that goes into an artisanal product, but surely, the unmistakable and unparalleled taste, once we have tried it, cannot make us go back. Italian artisanal pasta is a natural source of universal happiness, or to quote the famous Italian cinematographic Director Federico Fellini, “Life is a combination of pasta and magic”.
