Panzanella Toscana, ecco come preparare un piatto estivo facile e gustoso!

(Translation below) Eccomi nuovamente qui, dopo una lunga pausa dovuta ad impegni lavorativi. Le vacanze estive si avvicinano, ed io, che purtroppo causa Covid 19, anche per quest’anno dovrò rinunciare al mio amato nord Europa, avevo già nella mia testa, realizzato e girato il trailer della mie giornate estive.

Riuscivo già a visualizzare la scena: seduta in riva mare con la brezza che accarezza il viso, e le onde che si infrangono sul bagnasciuga regalando una rilassante sinfonia. Sguardo perso e trasognante verso l’orizzonte. Una tovaglia candida che pigramente svolazza giù dal mio tavolo, ed io che mi riempio prima gli occhi (e poi lo stomaco), delle meravigliose e gustose preparazioni, che la nostra cucina tipica offre.

Ebbene, è accaduto quello che ogni affamato nel DNA, più teme nella vita. Ladieta!

Intendiamoci, non è che non ne avessi bisogno…la pandemia, con la sua forzata immobilità, mi ha regalato chili in eccesso, che probabilmente non avrei mai preso. C’è chi si è dato allo sport…personalmente, ho deciso di dedicarmi allo sport del “sollevamento forchetta“, ed ora ne pago lo scotto.

Che sia chiaro: non rimpiango niente, lo rifarei! Ma dover seguire una dieta d’estate, quando si è in ferie, è quanto di più crudele si possa infliggere a qualcuno che ama mangiare. Amare, è forse un termine non appropriato nel mio caso: io idolatroil cibo.

Ormai da oltre un mese, mi aggiro per la città, come una tossica in crisi di astinenza. Sospiro davanti alle vetrine delle pasticcerie. Mi soffermo come un segugio da tartufo, appena sento un buon profumo di cibo, provenire da qualche abitazione. Inspiro e pregusto attimi di bontà, come se quel succulento odorino stesse aspettando me. Inganno il tempo, ingrassando ed illudendo la mente con lunghe sedute di ricette in tv, o leggendo moltitudini di ricette.

C’è chi pensa che mi sto torturando. A me al contrario, tutto questo dona un certo senso di sazietà per il mio povero animo tormentato.

Probabilmente sgarrerò, anzi, la mia è praticamente una certezza. Ovvio, farò in modo di non perdere i risultati ottenuti fino ad ora, ma, nessuno potrà mai allontanarmi dal cibo. E’ un dato sicuro, come quello che dopo la notte arriva sempre il giorno.

Al momento non posso avvicinarmi ai carboidrati (neanche un milligrammo), ma voi potete.

Chi sono io dunque, per privarvi di un piatto estivo, buono, fresco, genuino e veloce, come la panzanella toscana?

A voi che mi leggete, vicini o lontani, lascio qui la ricetta originale. Preparatela e mangiatela con gusto. E se al primo boccone, mi dedicherete un pensiero, sarà come aver fatto un’opera buona, nei confronti una persona che soffre.

Mi raccomando, la panzanella è una ricetta semplice e povera, che, come la maggior parte della cucina tipica toscana, si rifà alla civiltà contadina. Dimenticate quindi tagli da Chef simmetrici, le verdure, devono essere tagliate grossolanamente, e soprattutto, è fondamentale che siano fresche e genuine.

Ricetta della Panzanella toscana

Ingredienti per 4 persone

  • 400 gr. pane raffermo (senza sale);
  • 300 gr. di pomodori maturi;
  • 1 cetriolo grande;
  • 1 cipolla rossa grande;
  • 10 foglie di basilico fresco;
  • olio extra vergine di oliva;
  • aceto di vino rosso;
  • sale
  • pepe

Occorrente

  • 2 recipienti capienti (zuppiere);
  • coltello affilato per tagliare le verdure;
  • cucchiai per girare l’impasto

Preparazione della panzanella toscana

Prendete un contenitore capiente, riempitelo di acqua a temperatura ambiente, ed immergeteci il pane raffermo. Il pane tipico toscano, è privo di sale (poi un giorno vi racconterò la sua storia!), quindi la ricetta originale della panzanella toscana, prevede l’esclusivo utilizzo di questa tipologia di pane specifico.

Lasciatelo in acqua per circa dieci minuti, non oltre, altrimenti risulterà troppo bagnato. Una volta tolto il pane dall’acqua, strizzatelo con forza con le mani, e sbriciolatelo all’interno del secondo contenitore.

Lavate i pomodori e tagliateli a pezzetti. Sbucciate sia la cipolla che il cetriolo, e tagliateli entrambi a rondelle. Lavate le foglioline di basilico e spezzettatelo a mano. Una volta ultimata l’operazione, versate nel contenitore i pomodori, il cetriolo e la cipolla, dove avevate precedentemente lasciato il pane sbriciolato. Mescolate affinché gli ingredienti si amalgamino.

Aggiungete adesso il Re della cucina italiana: l’olio extra vergine di oliva. Non siate tirchi! l’olio EVO deve fare da “collante”, ed il suo gusto rotondo ed avvolgente, si deve avvertire all’interno del piatto.

Dopodiché aggiustate a piacimento con sale e pepe. A questo punto, aggiungete anche le foglie di basilico che avevate preparato in precedenza. Prendete il recipiente e mettete la vostra panzanella toscana, in frigorifero.

La panzanella toscana ha bisogno di tempo per insaporirsi. Gustata fredda, sarà ancora più deliziosa.

Toglietela dal frigorifero poco prima di servirla a tavola. Aggiungete sul momento qualche goccia a piacimento di aceto di vino rosso. E’ un must per rendere la ricetta della panzanella toscana perfetta. Riconosco però, che non a tutti può piacere il gusto intenso dell’aceto di vino rosso, lascio a voi la scelta se aggiungerlo o meno.

Mi raccomando, quest’ultimo passaggio con l’aceto, va sempre eseguito in ciascun singolo piatto! non versate mai l’aceto in zuppiera, a meno che non sia gradito a tutti, e siate certi di terminare la vostra panzanella in una volta. Qualora dovesse avanzare, difficilmente riuscireste a mangiarla il giorno dopo, perché il sapore risulterà troppo intenso.

Tuscan panzanella, how to cook a delicious summer dish

Here I am again, after a long break due to work commitments. The summer vacations are approaching, and I, who unfortunately because of Covid 19, also for this year will have to give up my beloved northern Europe, I had already in my head made and shot the trailer of my summer style.

I could visualized my days: Sitting on the seashore with the breeze caressing my face, and the waves breaking on the shoreline giving a relaxing symphony. Lost and dreamy looking towards the horizon. A white tablecloth lazily fluttering down from my table, and me filling my eyes first (and then my stomach), with the wonderful and tasty preparations that our typical cuisine offers.

Well, every DNA starving person’s worst nightmare has come true. Yes, you guessed it: someone very cruel put me on a diet!

Mind you, I needed it…the pandemic, with its forced immobility, gave me excess pounds that I probably would have never gained. Some people took up sports…personally, I decided to dedicate myself to the sport of “fork-workout“, and now I’m paying the price. A very expensive price.

Let me be clear: I regret nothing, I would do it again! But having to go on a diet in the summer, when you’re on vacation, is about the most worst thing can inflict on someone who loves to eat. Loving, is perhaps an inappropriate term to me: I idolize food.

For over a month now, I’ve been wandering around the city, like a junkie in withdrawal. I sigh in front of pastry shop windows. I linger like a truffle hunter, as soon as I smell a good scent of food coming from a house. I inspire and anticipate moments of goodness, as if that succulent smell was waiting for me. I get fat and delude my mind, following episodes of recipes on TV, or reading multitudes of recipes. Some people think it’s a torture, but to me, is the opposite. All this gives me a certain sense of satiety to my tormented soul.

I will probably splurge, in fact, mine is practically a certainty. Of course, I’ll make sure I don’t lose the results I’ve achieved so far, but, no one can ever turn me away from food. It’s a sure thing, like the fact that after the night always comes the day.

At the moment I can’t eat carbs (not even a milligram), but you can. Who am I, then, to deprive you of a summer good dish, fresh, genuine and fast as Tuscan panzanella?

To those who reads me, even if you are near or far from Tuscany, I leave here the original recipe of panzanella toscana. Prepare it and eat it with enthusiasm. And if at the first mouthful, you will dedicate a thought to me, it will be like having done a good deed towards a person who is suffering (lol).

I recommend you, the Tuscan panzanella is a simple and poor recipe, which, like most of the typical Tuscan cuisine, refers to the peasant civilization. Forget about symmetrical chef cuts, the vegetables must be coarsely chopped, and above all, it is essential that they are fresh and genuine.

Ingredients for 4 people

  • 400 gr. stale bread (without salt);
  • 300 gr. of ripe tomatoes;
  • 1 large cucumber;
  • 1 large red onion;
  • 10 leaves of fresh basil;
  • extra virgin olive oil;
  • red wine vinegar;
  • salt
  • pepper

You will need

  • 2 large containers (soup tureens);
  • sharp knife for cutting vegetables
  • spoons to turn the mixture

Preparation of panzanella toscana

Take a large container, fill it with water at room temperature, and dip the stale bread in it. The typical Tuscan bread, is devoid of salt (then one day I’ll tell you its story!), so the original recipe of Tuscan panzanella, provides for the exclusive use of this specific type of bread.

Leave it in water for about ten minutes, but no longer, otherwise it will be too wet. Once the bread has been removed from the water, squeeze it vigorously with your hands, and crumble it inside the second container.

Wash the tomatoes and cut them into small pieces. Peel both the onion and the cucumber, and cut both into rounds. Wash the basil leaves and chop them by hand. Once this is done, pour the tomatoes, cucumber and onion into the container where you had previously left the crumbled bread. Combine the ingredients and mix them together with spoon

Now add the king of Italian cuisine: extra virgin olive oil. Don’t be stingy! The EVO oil must act as a ” bond agent”, and the round and enveloping taste of the oil must be felt in the dish. Then add salt and pepper to taste. At this point, add the basil leaves that you have already prepared. Take the container and put your Tuscan panzanella in the refrigerator.

Tuscan panzanella needs time to season. Enjoyed cold, it will be even more delicious.

Remove it from the refrigerator just before eating. Add a few drops of red wine vinegar on the spot as desired. This is a must to make the Tuscan panzanella a perfect recipe. I recognize, however, that not everyone may like the intense taste of red wine vinegar, so I leave the choice up to you.

Remember, this last step with the vinegar, should always be done in each individual dish! Never pour the vinegar into the tureen, unless everyone likes it, and be sure to finish your panzanella at once. Should there be any left over, you will hardly be able to eat it the next day, because the flavor will be too intense.
